Ingredients

  • 3 cups leftover boiled sweet potatoes
  • 1 cup white or yellow corn kernels
  • 1 cup diced cucumber
  • 1 medium sliced red onion
  • Chopped peanuts
  • Cranberry vinaigrette

Directions

  1. Combine cooked sweet potatoes, cut corn, diced cucumbers, and red onion in a medium sized mixing bowl and dress with vinaigrette and finish with a sprinkle off chopped peanuts.
