Toad in the Hole

  • 1 slice Irish Soda Bread (or Sourdough)
  • 1 egg
  • 1 tablespoon butter
  • 1/2 cup cream
  • 1 shallot or 2 tablespoon onion, minced
  • Pinch of nutmeg
  • Salt and pepper, to taste


  1. Cut a hole that takes about 2/3 slice of bread.

  2. Heat an egg pan and add the butter to melt over medium heat.

  3. Place the bread in the pan and crack the egg into the hole.

  4. Cook until the egg is sunny side-up and flip to cook the other side.

  5. Place the toad in the hole on a serving plate and add the onion to the pan and sweat for a minute or two. Add the cream and seasoning.

  6. Reduce until slightly thickened and pour around the toad.

  7. Serve with crisp bacon or sausage.
