Ingredients

  • Roughly 7 cups baby spinach
  • 1 cup fresh mint
  • 1 cup fresh (preferably) plums, or prunes. Diced
  • ½ cup violets, primroses or other edible flower
  • ½ cup candied walnuts
  • 4 oz. goat cheese, optional
  • Balsamic Vinaigrette:
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon course ground mustard (love your mustard)
  • 1 garlic clove, minced
  • 1/2 cup olive oil
  • 1 tbsp. shallot, minced
  • Salt and pepper to taste

Directions

  1. Procedure: Combine spinach, mint, and fruit; toss with dressing. Top with flowers, nuts, and goat cheese crumbles.
