Ramen Thai Salad

  • 2 cups shredded Chinese cabbage Napa
  • 2 cups shredded lettuce
  • 1 mango, peeled, pitted and cubed
  • 2 cups fresh pineapple chunks
  • 1 cup sliced water chestnuts
  • 1 cup snow peas
  • 1 small red pepper sliced thin
  • 3 tablespoon white wine vinegar
  • 1 teaspoon grated ginger
  • 1 tablespoon brown sugar
  • 1 teaspoon soy sauce
  • ½ cup plain low fat yogurt
  • 1 tablespoon toasted sesame seeds
  • 2 cups ramen noodles


  1. Combine all vegetables in a large bowl, in a separate bowl combine remaining ingredients except for the noodles and sesame seeds mix well.

  2. Pour mixture over the vegetables adding the noodles, toss all together and serve. Sprinkle with sesame seeds.
