Pasta Salad

  • 1 pound interestingly shaped and possibly multicolored pasta
  • 1 small vidalia onion, small diced
  • 1 small carrot, grated
  • 2 ribs celery , medium diced
  • 1/2 red and 1/2 green pepper, medium diced
  • 2 tomatoes, seeded and diced medium
  • 1/2 cup ranch dressing
  • 1/2 cup zesty Italian dressing (or dressing that you like)


  1. Cook the pasta as normal adding 1 minute to usual cooking time. THe pasta will firm up when cold.

  2. Add rest of ingredients and toss well.

  3. Season with salt and pepper and mix again.

  4. Pack in a large Ziploc bag in cooler with other cold dishes. You can bring a serving bowl for aesthetics but it's just one more thing to haul and wash later.
