Minted Cucumber Salad

  • 2 English Cucumbers
  • 1 tsp. Salt
  • 1/4 cup Red Onions Chopped
  • 1/4 White Wine Vinegar
  • 2 Tbsp. EVOO
  • 2 Tbsp. Canola Oil
  • 2 1/2 tsp Sugar
  • 1/4 tsp. Cracked Black Pepper
  • 1/4 cup chopped fresh Mint


  1.  Wash and cut cucumbers lengthwise and seed with a teaspoon.

  2. Cut the cucumbers into thin slices.

  3. Place in a strainer and sprinkle salt over the top to remove excess moisture.

  4. Let stand in sink 30 minutes. Press dry and turn out on a tea towel. Blot dry.

  5. Combine all ingredients ina medium bowl and toss. Adjust seasoning and chill 20 minutes.
