Gluten Free Fettuccini and Green Bean Casserole

  • 1 cup rice flour
  • 1 egg
  • Pinch of salt
  • 1 pound trimmed green beans
  • 3 minced shallots
  • 3 shallots sliced into rings
  • 4 large button mushrooms
  • 2 tablespoon butter
  • 2 tablespoon rice flour
  • 12 ounce cream
  • Pinch of nutmeg
  • Salt and pepper to taste
  • ½ cup canola oil


  1. Mix the first three ingredients to form pasta dough.

  2. Roll out with a pin or pasta machine and cut into fettuccini.

  3. Boil for about 3-4 minutes until dough is just set but not mushy

  4. You can blanch the beans at the same time in the pot with the pasta.

  5. In a sauce pan melt the butter and add the veggies except for the shallot rings and sauté to caramelize a bit.

  6. Add the rice flour to make a roux paste and then whisk in the cream.

  7. Return to a boil and reduce to a simmer until thickened.

  8. Combine sauce with beans and put in casserole dish.

  9. Dredge the rings in rice flour then cream and back in rice flour and fry until crisp.

  10. Top the casserole after baking for 30 minutes at 375 degrees and continue to bake for another 15 minutes.

  11. Serve as a side dish with your other favorite like candied yams, a green vegetable, crudités and dip, stuffing made from gluten free muffins or mashed potatoes.

  12. Cooking gluten free is a bit of a challenge but with the availability of alternate flours and grains and some ingenuity a multitude of great foods you love are still able to be made.

    Soy flour can replace eggs using 1 tablespoon soy flour and 2 teaspoon water.

    Rice oat and corn flours blended together can produce fine gluten free breads and pastry.

    Many flourless Chocolate cake recipes are out there so be bold and experiment. The worst thing that can happen is that it doesn’t work and try something else. The more you use these products your understanding of their natures will come and you will be cooking like a trained pastry chef in no time. Remember to have fun, gather all your ingredients before starting and familiarize yourself with a new recipe all the way through before executing to make sure it makes sense to you.
