Fried Noodle with Shrimp

  • 1 cup (approx. 4 oz.) soaked and softened rice noodles (soak in cold water 1-2 hours or overnight, drain)
  • 1/3 cup chopped scallions
  • 1 cup bean sprouts (or white cabbage finely sliced)
  • 2 tablespoons peanuts or cashews, roasted, unsalted, finely chopped
  • ½ block firm tofu drained cut into small cubes 1x1
  • ½ large red chili pepper, seeded and finely sliced
  • 1 tablespoon dried shrimp (soaked in warm water then drained)
  • 2 shallots finely sliced
  • 2 eggs
  • (½ teaspoon dark soy sauce, ½ teaspoon fresh ground black pepper to marinate noodles)
  • 1 tablespoon or vegetable oil
  • ½ cup chicken or vegetable stock
  • 2 tablespoon tamarind liquid
  • 1 teaspoon finely chopped garlic
  • ½ teaspoon soy sauce
  • ½ teaspoon fish sauce
  • 2 teaspoon sugar


  1. Lightly dust tofu cubes with flour or rice flour

  2. Fry cubes in oil about a minute each side

  3. Mix rice noodle with dark soy and pepper.

  4. Heat 1 tablespoon oil adds shallots, garlic, pepper and dried shrimp.

  5. Sauté briefly, then add eggs and scramble.

  6. Add noodles ¼ cup chicken stock stir about 30 seconds.

  7. Add scallions, bean sprouts and fresh chili.

  8. Add 2 tablespoons tamarind liquid, ½ teaspoon fish sauce, ½ teaspoon soy sauce, 2 teaspoons oyster sauce, 2 tablespoons sugar and ¼ teaspoon ground pepper.

  9. Garnish with peanuts, scallions, cilantro, crushed red pepper, lime wedges, bean sprouts(crushed red pepper, sugar, fish sauce)
