Lightly dust tofu cubes with flour or rice flour
Fry cubes in oil about a minute each side
Mix rice noodle with dark soy and pepper.
Heat 1 tablespoon oil adds shallots, garlic, pepper and dried shrimp.
Sauté briefly, then add eggs and scramble.
Add noodles ¼ cup chicken stock stir about 30 seconds.
Add scallions, bean sprouts and fresh chili.
Add 2 tablespoons tamarind liquid, ½ teaspoon fish sauce, ½ teaspoon soy sauce, 2 teaspoons oyster sauce, 2 tablespoons sugar and ¼ teaspoon ground pepper.
Garnish with peanuts, scallions, cilantro, crushed red pepper, lime wedges, bean sprouts(crushed red pepper, sugar, fish sauce)
