Fettuccini with Cherry Tomatoes

  • 1 pound cherry tomatoes, cut in half
  • 1/2 small red onion, thinly sliced
  • 1/4 cup white wine vinegar
  • 4 tablespoons olive oil
  • 1 tablespoons fresh thyme, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 pound GF fettuccini, cooked according to package instructions, rinsed and drained


  1. In a large bowl, combine tomatoes, onion, vinegar, oil, thymes, parsley, pepper, and salt.

  2. Add cooked pasta, toss to combine and serve immediately.
