Chili Con Carne

Ingredients

  • 1 pound Ground Beef
  • 1 pound Chorizo sausage
  • ½ medium green pepper dice
  • 1 medium onion dice
  • 1 or 2 hot pepper
  • 2 tablespoons olive oil
  • 1 can of kidney or white beans
  • 1 can diced tomatoes
  • 2 tablespoons ground cumin
  • 4 tablespoons dark chili powder
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Grated cheddar cheese
  • Sour cream

Directions

  1. Chop the chorizo into small cubes.

  2. In a large heavy pot heat the olive oil.

  3. Add the beef, chorizo, onion, garlic and pepper to the pot and cook on medium high heat until the meat browns and the veggies are wilted.

  4. Add the spices and fry them with the meat for a couple of minutes.

  5. Add the beans, tomatoes, and about 1 cup of water.

  6. Simmer until the chili is reduced to the texture you want and serve.

    Serve raw diced onions, sour cream, and grated cheddar cheese on the side.
