Brioche Muffins

  • 2 cups rice flour
  • ¼ cup soy flour
  • Pinch of salt
  • ½ tablespoon dry yeast
  • 2 teaspoon baking powder
  • 2 tablespoons sugar
  • 2 sticks unsalted butter
  • 6 eggs
  • ¾ to 1 cup milk
  • Your choice of garnish like berries, nuts, dried fruits, spices and extracts.
  • You can also replace up to ¾ cup of flour with corn meal and add grated cheese, diced peppers or other southwestern flavors.


  1. Combine all dry ingredients and stir to blend.

  2. Add the softened butter and mix well.

  3. Add the eggs and milk and stir until smooth batter forms.

  4. Fill lined cupcakes tins ¾ of the way and allow to sit covered for about 40 minutes in a warm spot.

  5. Bake at 425 degrees until set about 15 to 20 minutes.

  6. The variations are endless and you can use savory flavored ones as a base for gluten free stuffing.
