Bitter Greens with Vinaigrette

  • 8oz escarole, coarsely torn
  • 1 bunch watercress, coarsely torn
  • 1 cup drained canned baby corn, cut into 1" pieces
  • 8 radishes, thinly sliced
  • 1/4 cup lemon juice
  • 3 tbsp. chili sauce
  • 1 tsp. coarse-grain mustard
  • 1/8 tsp. ground red pepper
  • 1oz peppercorn-flavored feta cheese


  1. In a large bowl, combine the escarole, watercress, corn and radishes.

  2. In a small bowl, whisk together the lemon juice, chili sauce, mustard and pepper. Pour over the salad toss to mix well. Crumble the feta over the top.
