Baked Brie en Croute

  • 1 sheet Frozen Puff Pastry (such as Pepperidge Farms)
  • 1 egg
  • ½ cup seedless raspberry jam
  • ¼ cup toasted almonds (or nut of choice)
  • 1 teaspoon water
  • 1/3 cup dried cranberries (softened)
  • Brie Cheese rd. (about 1#)
  • Cracker of choice for service (optional)


  1. Remove pastry from freezer and thaw at room temperature for 30 minutes.

  2. Preheat oven to 400 degrees. Combine egg with water and set it aside.

  3. On lightly floured surface unfold pastry sheet and roll out to about 14 inch square. Cut off corners to make a circle (reserve for decorations if desired).

  4. Spread jam to within 1 inch of all edges and sprinkle cranberries and almonds on top of jam.

  5. Place cheese wheel on top of everything. Brush exposed edges of pastry with egg wash and fold edges over cheese to totally encase.

  6. Turn wheel over and place seam down on baking sheet. Decorate top with left over scrapes and brush with remaining egg wash.

  7. Bake for approximately 20 minutes or until golden brown. Let stand for about 1 hour and serve with or without crackers.
